Gas or Charcoal?

In modern American, to barbecue means: “to cook outdoors”. Barbecue, or as we like to call it BarBQ (often shortened to: BBQ), is now considered truly an “American cuisine”. Not because we invented it but because we have created so many innovated ways of “doing it”. From elaborate outdoor brick fireplaces to modern gas grills, our passion for BBQ is only surpassed by our passion for the “best” way to BBQ. “Purists”, (or the BBQ far left), say that “charcoal grills” are the “best” way to BBQ. Frankly, that’s bunk! Examine the reasons why BBQ is so popular and it is not hard to understand that BBQ is all about “flavor” and to a lesser degree, convenience. With today’s modern gas grills it is possible to not only duplicate any flavor a charcoal grill can impart; but you can also eliminate flavors and control temperatures well beyond the capabilities of charcoal grills. This becomes most important if you choose to cook everything outdoors, as I do. For convenience sake, there is no comparison. A modern gas grill is simply much more convenient and therefore the number one choice of Americans.
