Ingredients
- 4 ounces thick-sliced bacon -- chopped
- 2 tablespoons lard
- 1/2 red onion -- sliced
- 1 large apple -- peeled and diced
- 1 head red cabbage -- sliced thin
- 1 cup apple juice
- 3 tablespoons red wine vinegar
- 2 tablespoons cherry jam
- 1 tablespoon granulated sugar
- 1 bay leaf
- 3 whole cloves
- 2 whole juniper berries
- 1/2 teaspoon salt

Instructions
- Melt lard in large 6 quart Duth oven. Saute bacon until it begins to brown. Add onions & apples and saute for about 8 minutes. Add cabbage and saute for 5 more mintes. Add remaining ingredients and bring to a boil. Lower heat and simmer for one hour.
- Serve warm or cold.
