Ingredients
- 1 tablespoon oil
- 1/2 cup unsweetened applesauce
- 1/2 cup sugar
- 1/2 cup dark brown sugar
- 2 eggs
- 2 ripe bananas
- 1 tablespoon molasses
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking powder
- 1 1/2 cups self-rising flour
- 1/4 cup King Arthur Harvest Grains Blend
- 1/4 cup chopped pecans or walnuts

Instructions
- In a medium skillet, melt the butter and continue cooking on medium heat until it browns. Remove from heat and immediately add the oil. Stir to cool and stop the cooking. Preheat oven to 350F.
- In a large bowl, add the browned butter, applesauce, and both sugars: mix with a hand mixer to combine. Add eggs and mix first on low speed, then on high speed until mixture is well combined and smooth. Add bananas and mix until smooth again. Add molasses, vanilla, cinnamon, whole wheat flour, and baking powder (stir on top of flour), then mix until smooth again. Add remaining ingredients and stir to combine, but do not overmix. There should be no dry spots in batter.
- Grease a 9x5 inch loaf pan with oil or butter. Pour batter into pan. Place in oven and bake for 55-65 minutes, or until tested done.
- Cool completely before serving.
