Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef 95% lean
- 1 tablespoon tomato paste
- 12 cups water
- 2 tablespoons Knorr Chicken Soup Powder
- 1 packet Lipton's Beefy Onion Soup
- 1 pound coleslaw mix
- 1 large carrot Julienned
- 1 large leek Julienned
- 14 1/2 ounces diced tomatoes
- 3 stalks bok choy
- 1 tablespoon Veggie Blend Seasoning
- 1/2 bunch fresh parsley sprigs
- 1 tablespoon Maggi Seasoning
- 1 teaspoon sea salt
- 1/4 cup apple cider vinegar
- 1/2 teaspoon black pepper

Instructions
- Heat oil in a 8qt stock pot. Add ground beef and begin to brown. Add tomato paste and continue to brown. Deglaze pan with about one cup of water. Add remaining water and all ingrdients. Bring to boil add simmer for about 30 minutes. I prefer to cool overnight and re-heat portions as needed. Makes about 16 one-cup servings.
