  1. Preheat oven to 400F. Heat olive oil in a large skillet, add bacon and cook until crisp; then add shallot and cook until soft. Add frozen spinach, and continue cooking until spinach is done. Set aside to cool.
  2. Place cream cheese, heavy cream, and water in a bowl and whisk until smooth. Add eggs, garlic, and pepper; then beat until well combined. Stir in spinach mixture.
  3. Spray a mega muffin pan with olive oil. Portion egg mixture in each of six muffin wells. Top with a tablespoon of cheese. Bake for 25 minutes, or until golden brown on top.
