Ingredients
- 1 teaspoon olive oil
- 2 slices bacon-- chopped
- 1 shallot -- sliced
- 5 ounces spinach frozen
- 2 ounces cream cheese
- 2 tablespoons heavy cream
- 1/4 cup water
- 6 eggs
- 1/4 teaspoon garlic
- 1/4 teaspoon white pepper
- 6 tablespoons Gruyere cheese -- grated
- 1/2 teaspoon sea salt

Instructions
- Preheat oven to 400F. Heat olive oil in a large skillet, add bacon and cook until crisp; then add shallot and cook until soft. Add frozen spinach, and continue cooking until spinach is done. Set aside to cool.
- Place cream cheese, heavy cream, and water in a bowl and whisk until smooth. Add eggs, garlic, and pepper; then beat until well combined. Stir in spinach mixture.
- Spray a mega muffin pan with olive oil. Portion egg mixture in each of six muffin wells. Top with a tablespoon of cheese. Bake for 25 minutes, or until golden brown on top.
